Ingredients
- 400g spaghetti
- 3 large fresh eggs
- 100g grated Pecorino Romano cheese
- 150g thick-cut turkey strips
- Freshly cracked black pepper and salt
Instructions
- Boil salted water in a large pot and cook the spaghetti until al dente.
- In a skillet over medium heat, cook turkey strips until crispy and golden brown.
- Whisk eggs and grated Pecorino Romano together in a mixing bowl until smooth.
- Drain spaghetti, reserving some pasta water, then add hot spaghetti to the skillet with turkey.
- Off heat, mix in the egg and cheese mixture quickly, adding reserved pasta water as needed for creaminess.
- Serve immediately with extra grated cheese and black pepper.
