  • 1 pound lean ground beef
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg (lightly beaten)
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package directions until al dente, then drain and set aside.
  3. In a large skillet, brown the ground beef with the onion and garlic over medium-high heat; drain excess grease.
  4. In a mixing bowl, combine the cooked beef mixture with ricotta, Parmesan, egg, parsley, Italian seasoning, salt, and pepper.
  5. Spread 1 cup of marinara sauce in a baking dish and stuff each shell with the beef mixture before placing them in the dish.
  6. Pour remaining marinara sauce over the shells and sprinkle with mozzarella.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly.
