Ingredients
- 16 ounces penne pasta
- 15 ounces ricotta cheese (divided)
- 24 ounces marinara sauce
- 1 egg
- 1/2 cup mozzarella cheese (shredded)
- 1/2 cup Italian blend cheese (shredded)
- 1/2 cup Parmesan cheese (divided & shredded)
- 2 tablespoons fresh basil (chopped)
- Salt & pepper (to taste)
Instructions
- Cook the penne pasta al dente according to package instructions. Drain and toss with olive oil.
- In a mixing bowl, combine one cup of ricotta, mozzarella, Italian blend cheese, 1/4 cup Parmesan, and egg; mix well.
- In a saucepan, combine the marinara sauce and cheese mixture over medium-low heat until melted and smooth.
- Add the cooked pasta to the sauce and stir until fully coated.
- Serve in bowls topped with remaining ricotta and garnished with extra Parmesan and basil.
