Ingredients
- 8 oz spaghetti
- 4 cloves fresh garlic, minced
- ½ cup grated Parmesan cheese (plus extra for topping)
- 1 cup shredded mozzarella cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook spaghetti in salted boiling water until al dente (8-10 minutes). Drain, reserving ½ cup pasta water.
- In a large skillet, heat butter and olive oil over medium heat. Sauté minced garlic until fragrant (1-2 minutes).
- Lower heat and add Parmesan and mozzarella, stirring until melted into a creamy sauce. Gradually add reserved pasta water until desired consistency is reached.
- Toss cooked spaghetti in the skillet until well coated in the sauce. Season with salt and pepper to taste.
- Serve garnished with chopped parsley and extra Parmesan.
