  • 20 g (1 tablespoon) unsalted butter
  • 1 lb (450 g) chicken breast, cut into 1-inch pieces
  • 1 small onion, finely diced
  • 2 large garlic cloves, finely chopped
  • 1/4 teaspoon red chili flakes
  • 1 tablespoon Italian seasoning
  • 1.5 cups (300 ml) tomato sauce (passata)
  • 1 cup half and half (single cream)
  • 1/2 cup (50 g) grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente according to package directions. Reserve 1-2 cups of pasta water before draining.
  2. In a deep pan or Dutch oven, heat olive oil over medium heat and melt the butter. Add the cubed chicken breast and cook for about 5-6 minutes until golden.
  3. Stir in the diced onion, garlic, and red chili flakes; cook for an additional 2 minutes until softened.
  4. Mix in Italian seasoning and tomato sauce; stir well before adding half-and-half.
  5. Let the sauce simmer on low heat for about 2-3 minutes, then toss in the cooked pasta and grated Parmesan cheese.
  6. Combine well, season with salt and pepper to taste, garnish with parsley, and serve immediately.
