Ingredients
- 10.5 oz (300 g) pasta
- 1 tablespoon olive oil
- 20 g (1 tablespoon) unsalted butter
- 1 lb (450 g) chicken breast, cut into 1-inch pieces
- 1 small onion, finely diced
- 2 large garlic cloves, finely chopped
- 1/4 teaspoon red chili flakes
- 1 tablespoon Italian seasoning
- 1.5 cups (300 ml) tomato sauce (passata)
- 1 cup half and half (single cream)
- 1/2 cup (50 g) grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente according to package directions. Reserve 1-2 cups of pasta water before draining.
- In a deep pan or Dutch oven, heat olive oil over medium heat and melt the butter. Add the cubed chicken breast and cook for about 5-6 minutes until golden.
- Stir in the diced onion, garlic, and red chili flakes; cook for an additional 2 minutes until softened.
- Mix in Italian seasoning and tomato sauce; stir well before adding half-and-half.
- Let the sauce simmer on low heat for about 2-3 minutes, then toss in the cooked pasta and grated Parmesan cheese.
- Combine well, season with salt and pepper to taste, garnish with parsley, and serve immediately.
