Ingredients
- 12 ounces dried spaghetti or linguine noodles
- 6 ounces thick-sliced chicken
- 2 whole eggs
- 2 egg yolks
- 1 cup finely shredded Parmesan cheese
- 1 teaspoon coarsely ground black pepper
- ½ cup reserved starchy pasta cooking liquid
Instructions
- Boil a large pot of salted water and cook pasta until al dente. Reserve ½ cup of cooking water before draining.
- In a sauté pan over medium heat, cook chicken until golden and crispy. Turn off heat but keep chicken in the pan.
- In a bowl, whisk together eggs, yolks, cheese, and pepper until smooth.
- Add drained hot pasta to the sauté pan with chicken. Quickly stir in the egg mixture off heat, allowing residual heat to create a sauce. Incorporate reserved pasta water as needed for creaminess.
- Serve immediately with extra cheese and pepper if desired.
