Ingredients
- 16 ounces cavatappi noodles
- 3 tablespoons olive oil
- 3 teaspoons minced garlic
- 1 can (6 ounces) tomato paste
- 2 cups heavy whipping cream
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 teaspoons red pepper flakes
- 1 cup reserved pasta water
- Fresh parsley for garnish
Instructions
- Cook the cavatappi noodles in a large pot of boiling water according to package instructions. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Stir in tomato paste, heavy cream, salt, black pepper, and red pepper flakes. Heat through.
- Gradually add reserved pasta water until desired sauce consistency is reached.
- Combine cooked noodles with the sauce, mixing well.
- Garnish with fresh parsley and serve warm.
