Ingredients
- 2 boneless, skinless chicken breasts
- 12 oz penne or fettuccine pasta
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 2 tablespoons Cajun seasoning
- ¼ cup grated Parmesan cheese
Instructions
- Season the chicken with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet and sear the chicken for about 6-7 minutes on each side until cooked through. Remove from heat and slice.
- Cook the pasta according to package instructions in salted boiling water until al dente. Reserve some pasta water before draining.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in additional Cajun seasoning and smoked paprika.
- Add heavy cream and chicken broth; simmer until thickened. Mix in Parmesan cheese until melted.
- Combine cooked pasta with the sauce and sliced chicken, adding reserved pasta water as needed for desired consistency.
