Ingredients
- 12 oz penne pasta
- 1 1/2 lb boneless skinless chicken breast
- 3 tsp Cajun seasoning
- 3 tbsp salted butter
- 1/2 yellow onion
- 2 bell peppers
- 1 1/2 cups heavy cream
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Cook the penne pasta until just al dente in salted boiling water, drain, and set aside.
- In a bowl, mix chicken with Cajun seasoning, salt, and pepper until well-coated.
- Melt 2 tbsp of butter in a skillet over medium heat; sauté chicken until golden and cooked through. Set aside.
- In the same skillet, melt remaining butter. Add diced onion and sliced bell peppers; cook until softened.
- Pour in heavy cream and add remaining seasonings; bring to a gentle boil.
- Return chicken to skillet, add cooked pasta and Parmesan cheese; toss until combined and cheese melts.
- Serve immediately while hot and creamy.
