Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 1 medium onion, chopped
- 1 cup bell peppers (red and yellow), diced
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and diced bell peppers; sauté for about 5 minutes until softened.
- Stir in garlic and Cajun seasoning; cook for another minute until fragrant.
- Add penne pasta and enough broth to cover it completely. Simmer until the pasta is tender, stirring occasionally.
- Lower the heat and mix in heavy cream and Parmesan cheese until smooth and creamy.
- Remove from heat, stir in fresh parsley, and season with salt and pepper to taste. Serve hot.
