Ingredients
- 350 g spaghetti
- 100 g turkey strips, diced
- 50 g pecorino cheese, finely grated
- 50 g parmesan cheese, finely grated
- 3 large eggs
- 2 plump garlic cloves, peeled and lightly crushed
- 50 g unsalted butter
- 100 ml single cream
- Salt, for pasta water
Instructions
- Boil salted water in a large pot and cook spaghetti until al dente; reserve some pasta water before draining.
- In a mixing bowl, whisk eggs and combine with most of the grated pecorino and parmesan.
- In a skillet over medium heat, melt butter and sauté garlic until fragrant; add turkey strips and cook until golden.
- Lower heat and add hot spaghetti to the skillet with the turkey.
- Remove from heat and quickly pour in the egg mixture, tossing to create a creamy sauce.
- Stir in cream, adjusting the consistency with reserved pasta water as needed.
- Serve immediately topped with remaining cheese and black pepper.
