Ingredients

  • 350 g spaghetti
  • 100 g turkey strips, diced
  • 50 g pecorino cheese, finely grated
  • 50 g parmesan cheese, finely grated
  • 3 large eggs
  • 2 plump garlic cloves, peeled and lightly crushed
  • 50 g unsalted butter
  • 100 ml single cream
  • Salt, for pasta water

Instructions

  1. Boil salted water in a large pot and cook spaghetti until al dente; reserve some pasta water before draining.
  2. In a mixing bowl, whisk eggs and combine with most of the grated pecorino and parmesan.
  3. In a skillet over medium heat, melt butter and sauté garlic until fragrant; add turkey strips and cook until golden.
  4. Lower heat and add hot spaghetti to the skillet with the turkey.
  5. Remove from heat and quickly pour in the egg mixture, tossing to create a creamy sauce.
  6. Stir in cream, adjusting the consistency with reserved pasta water as needed.
  7. Serve immediately topped with remaining cheese and black pepper.
