Ingredients
- 1 lb steak (sirloin or ribeye, thinly sliced)
- 1 tbsp olive oil
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 1 package (20 oz) cheese tortellini
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- 1 ½ cups provolone cheese, freshly grated
- ½ tsp garlic powder
- Salt & pepper to taste
Instructions
- 1. Heat olive oil in a large skillet over medium-high heat. Sear the thinly sliced steak until browned; remove from the pan.
- 2. In the same skillet, add onions and bell peppers; sauté until caramelized (about 8-10 minutes).
- 3. Boil salted water in a large pot; cook tortellini according to package instructions (3-5 minutes). Drain and set aside.
- 4. In a saucepan, melt butter over medium heat; whisk in flour for 1-2 minutes. Gradually add milk while whisking to avoid lumps. Cook until thickened (~5-7 minutes), then stir in provolone cheese and garlic powder until melted.
- 5. Combine cooked tortellini, steak, and vegetables into the sauce; toss gently to coat evenly.
- 6. Serve immediately, garnished with parsley and extra provolone if desired.
