Ingredients
- 8 oz Bowtie Pasta (or penne/rotini)
- 1 lb Chicken Breast (cut into bite-size pieces)
- 2 tbsp Cajun Seasoning
- 2 tbsp Olive Oil
- 4 tbsp Unsalted Butter (or plant-based)
- 3 cloves Garlic (minced)
- 2 tbsp Dijon Mustard
- Juice & zest of 1 Lemon
- 2 cups Broccoli Florets
- Fresh Parsley & Chives (for garnish)
- 0.5 cup Grated Parmesan Cheese (or nutritional yeast)
Instructions
- Boil salted water in a large pot and cook the bowtie pasta until al dente. Reserve 1 cup of pasta water before draining.
- Toss chicken pieces with Cajun seasoning in a bowl until coated.
- In a skillet over medium-high heat, add olive oil and cook the seasoned chicken until golden brown, about 4 to 6 minutes. Remove from skillet.
- Lower heat and add butter to the skillet. Once melted, sauté minced garlic until fragrant.
- Stir in Dijon mustard, lemon zest, and juice to create the sauce.
- Sauté broccoli florets until bright green; mix in half of the parsley and chives.
- Return chicken and pasta to the skillet, adding reserved pasta water as needed for sauce consistency. Sprinkle with Parmesan cheese.
- Adjust seasoning if necessary, garnish with remaining herbs, and serve warm.
