  • 2 tbsp Cajun Seasoning
  • 2 tbsp Olive Oil
  • 4 tbsp Unsalted Butter (or plant-based)
  • 3 cloves Garlic (minced)
  • 2 tbsp Dijon Mustard
  • Juice & zest of 1 Lemon
  • 2 cups Broccoli Florets
  • Fresh Parsley & Chives (for garnish)
  • 0.5 cup Grated Parmesan Cheese (or nutritional yeast)

Instructions

  1. Boil salted water in a large pot and cook the bowtie pasta until al dente. Reserve 1 cup of pasta water before draining.
  2. Toss chicken pieces with Cajun seasoning in a bowl until coated.
  3. In a skillet over medium-high heat, add olive oil and cook the seasoned chicken until golden brown, about 4 to 6 minutes. Remove from skillet.
  4. Lower heat and add butter to the skillet. Once melted, sauté minced garlic until fragrant.
  5. Stir in Dijon mustard, lemon zest, and juice to create the sauce.
  6. Sauté broccoli florets until bright green; mix in half of the parsley and chives.
  7. Return chicken and pasta to the skillet, adding reserved pasta water as needed for sauce consistency. Sprinkle with Parmesan cheese.
  8. Adjust seasoning if necessary, garnish with remaining herbs, and serve warm.
