Ingredients
- 12 oz penne pasta
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook penne pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- Stir in chopped sun-dried tomatoes and fresh spinach, cooking until the spinach wilts.
- Pour in heavy cream, stirring well to bring to a gentle simmer.
- Gradually add grated Parmesan cheese, salt, and black pepper, mixing continuously until melted into a creamy sauce.
- Add cooked penne pasta to the skillet and toss gently to coat evenly with the sauce.
- Serve warm and enjoy!
