Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- 1 cup grated Parmesan cheese
- 8 oz penne pasta
- Salt and black pepper to taste
- 1 tablespoon olive oil
Instructions
- Place chicken breasts in the crockpot. Drizzle with olive oil and season with salt, pepper, and Italian seasoning.
- Add minced garlic and chicken broth over the chicken.
- Pour in the cream and cover the crockpot. Cook on low for 6 hours until the chicken is tender.
- Shred the chicken using two forks and return it to the slow cooker.
- Stir in grated Parmesan cheese until melted and combined with the sauce.
- Cook penne pasta according to package instructions; drain.
- Add pasta to the crockpot and stir until well coated with sauce.
- Serve hot, garnished with fresh parsley if desired.
