  • Total Time: 35 minutes
  • Yield: Serves approximately 4

Ingredients

Scale
  • 1 pound chicken sausage
  • 12 ounces penne or rotini pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups chicken broth
  • 1/2 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and cook until browned (about 5 minutes). Remove and set aside.
  2. In the same skillet, add chopped onion and sauté until soft (about 3 minutes). Stir in minced garlic, sun-dried tomatoes, Italian seasoning, smoked paprika, and red pepper flakes; cook for an additional minute.
  3. Add dry pasta and chicken broth; bring to a boil. Reduce heat to medium-low, cover, and simmer for about 10-12 minutes until pasta is nearly tender.
  4. Stir in heavy cream and Parmesan cheese; continue stirring until the sauce thickens slightly (about 2 minutes).
  5. Return cooked sausage to the skillet and stir in fresh spinach until wilted (about 1 minute). Season with salt and pepper as needed. Serve immediately.
