Ingredients
- 1 pound chicken sausage
- 12 ounces penne or rotini pasta
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cups chicken broth
- 1/2 cup sun-dried tomatoes
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sliced chicken sausage and cook until browned (about 5 minutes). Remove and set aside.
- In the same skillet, add chopped onion and sauté until soft (about 3 minutes). Stir in minced garlic, sun-dried tomatoes, Italian seasoning, smoked paprika, and red pepper flakes; cook for an additional minute.
- Add dry pasta and chicken broth; bring to a boil. Reduce heat to medium-low, cover, and simmer for about 10-12 minutes until pasta is nearly tender.
- Stir in heavy cream and Parmesan cheese; continue stirring until the sauce thickens slightly (about 2 minutes).
- Return cooked sausage to the skillet and stir in fresh spinach until wilted (about 1 minute). Season with salt and pepper as needed. Serve immediately.
