Ingredients
- 12 oz spaghetti
- 4 oz turkey strips
- 4 large eggs
- 1 cup Pecorino Romano cheese
- 1/2 cup Parmesan cheese
- 1 tsp freshly ground black pepper
- 2 cloves garlic (optional)
- 1 tbsp olive oil (optional)
- Salt to taste
Instructions
- Cook spaghetti in salted boiling water until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium-low heat, cook diced turkey strips until crispy, about 10-15 minutes. If using garlic, add it during the last 30 seconds of cooking.
- In a medium bowl, whisk together eggs, Pecorino Romano, Parmesan cheese, and black pepper until smooth.
- Add hot drained spaghetti to the skillet with turkey and remove from heat. Quickly pour in the egg mixture and toss to combine.
- Gradually add reserved pasta water until desired creamy consistency is achieved.
- Serve immediately with extra cheese and black pepper as desired.
