Ingredients
- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- salt and pepper to taste
- olive oil for cooking
Instructions
- Cook the penne pasta in boiling water until al dente, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until fragrant.
- Add lean ground beef to the skillet and cook until browned.
- Stir in diced tomatoes, beef broth, Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper; simmer for about 5 minutes.
- Combine the drained pasta with the beef mixture; toss gently to combine.
- Serve hot garnished with fresh basil or parsley.
