Ingredients
- Spaghetti: 400 grams (about 14 oz)
- Extra virgin olive oil: 1/2 cup
- Garlic: 4 cloves, thinly sliced
- Red pepper flakes: 1/2 teaspoon (adjust to taste)
- Fresh parsley: 1/2 cup, chopped
- Lemon zest: from 1 lemon
- Grated Parmesan cheese: 1 cup (plus extra for serving)
- Salt: to taste
- Black pepper: to taste
Instructions
- Boil the spaghetti in salted water until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Sauté garlic and red pepper flakes for 1-2 minutes until fragrant.
- Add drained spaghetti to the skillet and toss to coat in garlic oil. Use reserved pasta water to adjust consistency if needed.
- Stir in chopped parsley and lemon zest; season with salt and black pepper.
- Plate the pasta, sprinkle with grated Parmesan cheese, and add more parsley or red pepper flakes if desired.
- Serve immediately while hot.
