  • ½ cup yellow bell pepper
  • ½ cup orange bell pepper
  • ¼ cup onion
  • 2 garlic cloves
  • 1 teaspoon Italian seasoning
  • ½ cup white grape juice
  • 1 can (28 oz) diced tomatoes
  • 12 oz egg noodles
  • Fresh parsley for garnish

Instructions

  1. In a large skillet or Dutch oven, heat ½ tablespoon olive oil over medium heat. Add Italian sausage and brown until cooked through. Remove and set aside.
  2. In the same pot, add remaining olive oil. Sauté onion, bell peppers, and garlic for about three minutes until fragrant.
  3. Pour in white grape juice; reduce by half.
  4. Add diced tomatoes (with juice), Italian seasoning, red pepper flakes, salt, and pepper. Simmer for about ten minutes.
  5. Return sausage to the pot and stir in chopped parsley. Cook for another five minutes.
  6. Meanwhile, prepare egg noodles according to package instructions; drain well and combine with the sauce.
