Ingredients
- 1 tablespoon olive oil
- 1 lb Italian sausage or ground turkey
- ½ cup red bell pepper
- ½ cup yellow bell pepper
- ½ cup orange bell pepper
- ¼ cup onion
- 2 garlic cloves
- 1 teaspoon Italian seasoning
- ½ cup white grape juice
- 1 can (28 oz) diced tomatoes
- 12 oz egg noodles
- Fresh parsley for garnish
Instructions
- In a large skillet or Dutch oven, heat ½ tablespoon olive oil over medium heat. Add Italian sausage and brown until cooked through. Remove and set aside.
- In the same pot, add remaining olive oil. Sauté onion, bell peppers, and garlic for about three minutes until fragrant.
- Pour in white grape juice; reduce by half.
- Add diced tomatoes (with juice), Italian seasoning, red pepper flakes, salt, and pepper. Simmer for about ten minutes.
- Return sausage to the pot and stir in chopped parsley. Cook for another five minutes.
- Meanwhile, prepare egg noodles according to package instructions; drain well and combine with the sauce.
