- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 ounces) black beans (rinsed and drained)
- 1 can (15 ounces) diced tomatoes with green chilies
- 1 cup corn kernels (frozen or canned)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1 cup salsa (mild or spicy)
- 1/2 cup diced green onions
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning, black beans, diced tomatoes, and corn. Let simmer for about five minutes.
- In a large bowl, combine cooked pasta with the beef mixture, salsa, and sour cream.
- Transfer to a greased baking dish and top with cheddar and mozzarella cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
