- 12 oz rotini pasta
- 14 oz smoked chicken sausage, sliced
- 1 1/2 cups shredded white cheddar cheese
- 1 packet ranch seasoning mix
- 2 cups milk
- 2 cups chicken broth
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 cups baby spinach
- 1/2 cup roasted red peppers, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced sausage and cook until browned (5–7 minutes). Remove and set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant (about 30 seconds).
- Pour in chicken broth and milk, scraping up any browned bits from the skillet.
- Stir in ranch seasoning mix and bring to a simmer.
- Add rotini pasta, ensuring it’s submerged in liquid; cover and cook for about 12–15 minutes until al dente.
- Lower heat and gradually stir in shredded white cheddar until melted and creamy.
- Fold in baby spinach and roasted red peppers until spinach wilts.
- Return cooked sausage to the pan, mixing everything together well.
- Season with salt and pepper before serving warm.
