- 1 lb smoked chicken sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion
- 1 bell pepper
- 3 cloves garlic
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté sliced sausage, chopped onion, and bell pepper until browned (about 5-7 minutes). Add minced garlic and cook for another minute.
- Stir in diced tomatoes, chicken broth, heavy cream, Cajun seasoning, salt, and pepper; bring to a boil.
- Add uncooked penne pasta; lower heat to simmer and cook until tender (10-12 minutes), stirring occasionally.
- Remove from heat and stir in grated Parmesan cheese until melted.
