- 2 tablespoons olive oil
- 1 cup onion (chopped)
- 6 cloves garlic (minced)
- 14 oz. fresh tomatoes (diced)
- 2 cups chicken broth
- 1 tablespoon chopped Italian basil
- 1/4 teaspoon salt (or to taste)
- 8 oz. spaghetti
- 1/4 cup shredded Parmesan cheese
- 1 tablespoon chopped Italian parsley
Instructions
- Heat olive oil in a wide skillet over medium heat. Sauté chopped onion and minced garlic for about 3 minutes until golden.
- Add diced tomatoes, chicken broth, Italian basil, and spaghetti. Press the spaghetti down to submerge it in the liquid.
- Cover with a lid, lower the heat to medium-low, and cook for about 8 minutes until the pasta is al dente. Add more broth if needed.
- Remove the lid, season with salt to taste, and top with Parmesan cheese and parsley before serving.
