- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground beef
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons fruit juice
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook Lo Mein noodles according to package instructions; drain and rinse under cold water.
- Heat peanut oil in a large skillet over medium heat. Add ground beef and green onions; cook until browned.
- In a bowl, whisk together chicken broth, fruit juice, soy sauce, garlic, ginger, sesame oil, and sriracha.
- Combine cooked noodles and coleslaw mix in the skillet with beef; pour sauce over everything and toss gently.
- Stir for about 2–3 minutes until heated through; garnish with remaining green onions before serving.
