  • 1 Tbsp. butter
  • 2 tsp. garlic, minced
  • 16 oz. jar roasted red peppers, drained
  • 1 1/4 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 12 oz. spaghetti noodles
  • Fresh parsley, for garnish

Instructions

  1. Cook the spaghetti noodles in a large pot of boiling water until al dente; drain and set aside.
  2. In a skillet, melt butter over medium-high heat. Add the chopped onion and garlic; sauté until softened.
  3. Transfer the onion mixture and drained roasted red peppers to a blender or food processor; blend until smooth.
  4. Return the blended mixture to the skillet over low heat, stir in heavy cream and simmer gently.
  5. Mix in grated parmesan cheese and seasonings (paprika, salt, pepper, red pepper flakes, sugar, lemon juice). Stir until heated through.
  6. Combine the cooked spaghetti with the sauce in the skillet and toss well to coat.
