Ingredients
- 1 medium yellow onion, chopped
- 1 Tbsp. butter
- 2 tsp. garlic, minced
- 16 oz. jar roasted red peppers, drained
- 1 1/4 cup heavy cream
- 3/4 cup grated parmesan cheese
- 12 oz. spaghetti noodles
- Fresh parsley, for garnish
Instructions
- Cook the spaghetti noodles in a large pot of boiling water until al dente; drain and set aside.
- In a skillet, melt butter over medium-high heat. Add the chopped onion and garlic; sauté until softened.
- Transfer the onion mixture and drained roasted red peppers to a blender or food processor; blend until smooth.
- Return the blended mixture to the skillet over low heat, stir in heavy cream and simmer gently.
- Mix in grated parmesan cheese and seasonings (paprika, salt, pepper, red pepper flakes, sugar, lemon juice). Stir until heated through.
- Combine the cooked spaghetti with the sauce in the skillet and toss well to coat.
- Serve immediately, garnished with fresh parsley.
