Ingredients
- 12 oz pasta (penne or rotini)
- 1 lb ground beef or turkey
- 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
- 1 cup heavy cream
- 1 tsp taco seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro or parsley (for garnish)
Instructions
- Cook pasta according to package instructions in salted water. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess grease.
- Stir in the undrained Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Simmer for about 5 minutes.
- Combine the cooked pasta with the sauce in the skillet and toss until well-coated. Stir in shredded cheddar cheese until melted.
- Garnish with fresh herbs if desired and serve hot.
