  • 10 oz penne pasta
  • 1 lb chicken breast (cut into bite-sized cubes)
  • 2 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 cup diced tomatoes
  • 2 cups spinach
  • 2 cups cream
  • 1/2 cup freshly grated parmesan cheese
  • salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to boil. Cook the penne pasta according to package directions until al dente.
  2. In a bowl, season the chicken cubes with garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken for about 4-5 minutes per side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  5. Stir in diced tomatoes and spinach; cook until spinach wilts.
  6. Reduce heat to medium-low, add cream and parmesan cheese; stir until smooth.
