Ingredients
- 10 oz penne pasta
- 1 lb chicken breast (cut into bite-sized cubes)
- 2 tbsp olive oil
- 4 garlic cloves (minced)
- 1 cup diced tomatoes
- 2 cups spinach
- 2 cups cream
- 1/2 cup freshly grated parmesan cheese
- salt and pepper to taste
Instructions
- Bring a large pot of salted water to boil. Cook the penne pasta according to package directions until al dente.
- In a bowl, season the chicken cubes with garlic powder, Italian seasoning, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken for about 4-5 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
- Stir in diced tomatoes and spinach; cook until spinach wilts.
- Reduce heat to medium-low, add cream and parmesan cheese; stir until smooth.
- Add cooked chicken and pasta back into the skillet; mix gently to combine.
