Ingredients
- 3 oz. chicken or turkey bacon
- 2 cloves garlic
- 12 oz. spaghetti
- 3 large eggs
- ¾ cup grated Parmesan cheese
- Freshly cracked black pepper
- Salt
Instructions
- Boil water in a large pot. Add salt and cook spaghetti according to package directions until al dente.
- In a skillet over medium-low heat, cook diced turkey bacon until crispy. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant.
- Whisk together eggs, half the Parmesan cheese, salt, and pepper in a bowl.
- Once spaghetti is cooked, reserve one cup of pasta water and drain.
- Combine hot spaghetti with bacon fat in the skillet.
- Quickly stir in egg mixture until creamy; add reserved pasta water if needed.
- Toss with remaining Parmesan and season as desired.
