Ingredients

  • 3 oz. chicken or turkey bacon
  • 2 cloves garlic
  • 12 oz. spaghetti
  • 3 large eggs
  • ¾ cup grated Parmesan cheese
  • Freshly cracked black pepper
  • Salt

Instructions

  1. Boil water in a large pot. Add salt and cook spaghetti according to package directions until al dente.
  2. In a skillet over medium-low heat, cook diced turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant.
  4. Whisk together eggs, half the Parmesan cheese, salt, and pepper in a bowl.
  5. Once spaghetti is cooked, reserve one cup of pasta water and drain.
  6. Combine hot spaghetti with bacon fat in the skillet.
  7. Quickly stir in egg mixture until creamy; add reserved pasta water if needed.
  8. Toss with remaining Parmesan and season as desired.
