Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente; drain and reserve a cup of pasta water.
- In a skillet, heat olive oil over medium heat. Add turkey strips and cook until golden brown (5-7 minutes), adding minced garlic in the last minute.
- In a mixing bowl, whisk together eggs and grated Pecorino Romano cheese, seasoning with black pepper.
- Reduce skillet heat to low and add cooked spaghetti to turkey strips and garlic; toss to combine.
- Slowly pour the egg mixture over pasta while tossing vigorously to create a creamy sauce, using reserved pasta water if needed.
- Serve immediately, garnished with extra cheese and pepper.
