- 12 ounces penne pasta
- 1 pound chicken or mushrooms/tofu for vegetarian
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream or coconut cream for dairy-free
- 1 cup bell peppers (any color)
- 2 cloves garlic
- 1/2 medium onion
- Olive oil
Instructions
- Dice protein of choice and chop vegetables.
- Cook pasta in salted boiling water until al dente. Drain and toss with olive oil.
- In a skillet, heat olive oil, sauté garlic and onion until translucent.
- Add protein to the skillet; cook until golden brown.
- Stir in bell peppers; cook until softened.
- Mix in heavy cream and Cajun seasoning; simmer to thicken.
- Combine pasta with sauce, adjusting consistency as needed with reserved pasta water.
- Serve hot, garnished with cheese or fresh herbs.
