- 5 large eggs
- 1 pound high-quality spaghetti
- 10 ounces diced turkey strips
- 1 ⅓ cups finely grated Pecorino Romano cheese
- ½ teaspoon crushed red pepper flakes
- Freshly ground black pepper
Instructions
- Cook the spaghetti in a large pot of salted boiling water until al dente (8–10 minutes). Reserve 1 cup of pasta water before draining.
- Meanwhile, heat a skillet over medium heat and cook the turkey strips for 5–7 minutes until crispy.
- In a mixing bowl, whisk together the eggs, grated cheese, and red pepper flakes until smooth.
- Add the cooked spaghetti to the skillet with turkey strips and toss to combine.
- Remove from heat and quickly pour in the egg mixture, tossing to create a creamy sauce. Add reserved pasta water as needed to adjust consistency.
- Serve immediately with additional cheese and freshly ground black pepper.
