Instructions
- Cook the pasta in salted boiling water according to package instructions until al dente, then drain.
- In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant (about 30 seconds).
- Whisk in the chicken broth and let it simmer until reduced by half.
- Stir in chopped sun-dried tomatoes and heavy cream; let it bubble gently for about five minutes.
- Add fresh spinach and grated parmesan cheese; mix until the spinach is wilted.
- Combine the sauce with drained pasta, season as desired, and serve.
