Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 12 oz fettuccine pasta
- 2 Tbsp unsalted butter
- 1 cup low-sodium chicken broth
- 1.5 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 6–8 cloves fresh garlic
- 1 Tbsp olive oil
- 1 medium yellow onion
- 1/4 cup fresh parsley
- Salt and freshly ground black pepper to taste
- Optional: fresh spinach
- Optional: cherry tomatoes
Instructions
- Cut chicken into 1-inch pieces and season with spices.
- Finely dice onion and mince garlic.
- Boil water, add salt, and cook fettuccine until al dente.
- Reserve pasta water before draining.
- Sear seasoned chicken in a skillet until golden brown.
- Sauté onion and garlic in the same skillet until fragrant.
- Deglaze with chicken broth; simmer.
- Stir in heavy cream and cheeses; season sauce to taste.
- Combine cooked pasta and chicken with the sauce; adjust consistency if needed.
- Stir in fresh parsley and any optional vegetables before serving.
